New Phasor Generator - Westerbeke for Sale!

Here are pictures (still from the Android since Nikon returned our camera UNTOUHED!  NOT FIXED!!).  Firstly, the Westerbeke came out.  It only had 311 hours on it and the bearing was shot.  When Wade pulled it out of the hole, he realized it could have been repaired, contrary to what the service man told us. ..and then he billed us for $191.00!  We had already bought the new one.  So here are the pictures of the old one coming out.








And then the new Phasor going in.  The fork lift guy was, thankfully, extemely talented to get it through the space in the bimini where Wade had removed a solar panel. Wade had everything planned out perfectly, with every detail.

We almost got away unscathed.  It was pretty windy and the wind wouldn't let us off the dock.  The dock master told us to gun it and we ripped off the barbeque and scratched the fibreglass below the starboard toe rail.  We should have stopped and got a bow line out to the portside dock or got a tow.  Anyway, we gunned it and barely missed a boat and the cement dock wall.  Of course, Wade has already fixed his BBQ!  Captain Amazing!!!!!!!

Wine and Dining Commentaries

A lovely, velvety wine with a distinctive smokey flavor that melts away to reveal the taste of the wine which has a hint of licorice and a tang of cherry.  About $25 a bottle @ Total Wines.  A memorable wine in a beautiful bottle embossed with a flaming heart.  Perfect for my birthday!





LOBSTER BISQUE     AND      LOBSTER Hors d'oeuvre

Since Wade got his new spear we have had an overabundance of lobster.  This recipe is a must!


Serves 8


Clean lobster and remove meat from tail.  Break off antennae, legs and head.  Make sure all the innards are dicarded.  In cauldron, cover with water and boil reducing broth for an hour.  Boil with a whole onion and 3 large cloves of garlic; large pinch of seasalt.  Cool.


Pour through sieve and save broth.  With side of knife, crush open shells and remove meat.  Discard shells.  Add sauteed red onion and garlic and lobster meat from shells to broth.  Add tomatoe soup of choice and a cup of tomatoe paste.  Blend with electric hand blender and bring to a simmer for 40 minutes.   Then, add 2 cups fresh cream and 2 tsp. paprika or cayenne and 2 tsp. basil; salt and crushed pepper to taste. Keep warm for 20 minutes.  Serve and garnish with dill.


Cut lobster pieces from tail and sautee in fresh garlic, butter and salt.  Serve with main course such as topping for fish, or just as an appetizer.


Enjoy with baguette and white wine.




BAKED COCONUT FISH
An easy crowd pleaser.

Olive oil, garlic, butter, salt, pepper, fresh rosemary or basil.  Catch of the day filets.   Alternate layer in bread pan uncovered or ideally in square corningware with glass lid.  Top with parmesan.  Bake 400 degrees for 30 minutes or until browned on top and fish is flakey.  Serve on brown rice or quinoa and snap peas or asparagus.

BUTTERMILK PANCAKES
THE WAY TO A MAN'S HEART

2 C flour                                                        2 1/2 C buttermilk
3 tbs. brown sugar                                         2 eggs 
2 tsp baking powder                                      1/3 C melted butter 
1 tsp baking soda
1/2 tsp salt 
Combine wet ingredients into dry ingredients with a spatula.  Heat skillet to hot with a tbsp. of vegetable oil and pour in one cup of the batter to make a large pancake.  Makes 8
Serve with sliced strawberries and syrup.

Love the Android!

Remember the "dingy incident"?  The camera drowned.  We bought a new one and that packed it in one week later and we still haven't got it back from Nikon.  Since then, Wade had another "mishap" and fell into the water with his phone so we got a new one and it has a camera!!! (New number: 786-333-8836).  Now we can document the many new installations and repairs to the Beneteau to get it ready for ocean crossings.

My daughter, Zephyr, was in Germany and returning home to Costa Rica on May 18.  In cahoots with her boyfriend Thomas, Wade and I flew to Costa Rica to surprise her (I had not seen her for over a year!)  We moored our beloved Beneteau at the Coconut Grove Sailing Club for a month and spent a week relaxing by the pool, 2 weeks surfing with "the kids" and 9 days at my house in Mal Pais on the southern tip of the Nicoya Penninsula.  Wade bought his first long board!  We saw close friends, surfed and I broke my favorite board.  :(   I got to see my dog, Loba and my cat, Misha!!

And before the Costa Trip we went to Iowa to see Wade's Family!

So, we are now back on our beloved Beneteau and the next posting will tell you why we are still here in Coconut Grove....
